Brief History

The origins of Kombucha (kom-boo-cha) have become lost in the mists of time.  It is thought to have originated in the Far East, probably China during the Tsin Dynasty (221 BC) where the ancients called it the “Elixir of Longevity” for its health benefits.  Ever since, it has been part of the ancient Zen philosophy of life and valued for its harmonizing effects on the body and soul.

The name “Kombucha” is said to have come from Japan in 415 AD.  People in Russia have a long tradition of using a healing drink called “Tea Kvass” made from a “Japanese Mushroom”.  From Russia it spread to Prussia, Poland, Germany and Denmark.  Today it is known and consumed around the world for its extraordinary health benefits.

What is Kombucha?

ANNE’s KOMBUCHA is a raw, freshly brewed, naturally effervescent fermented probiotic drink made by hand from sweet tea and a Kombucha culture known as a “SCOBY” (Symbiotic Culture Of friendly Bacteria and Yeast).  The culture is alive and is a co-dependent blend of healthy bacteria, yeasts and other micro-organisms.  Scoby is also referred to as a culture, mother, and baby.

This culture is said to have evolved from a plant organism over 2.5 billion years ago.  The Kombucha culture metabolizes the sugar and tea to grow and transforms the liquid into a by-product contains billions of healthy probiotic micro-organisms along with the organic acids, active enzymes, amino acids, and polyphenols produced by these microbes.

Although there is little published research on Kombucha, the fact that it is still here today after 2000 years is a testimonial in itself and that millions of people throughout the world have found it to have great value for it’s amazing health properties.

How does it taste?

ANNE’s KOMBUCHA is a pleasant tasting, powerfully effective health and energizing drink.  The taste can vary depending on how it is made.  The basic recipe will produce a slightly sparkling, sweet and sour drink.

After the Kombucha has fermented, we add the highest quality organic ingredients (freshly squeezed organic ginger root juice, organic lemons and limes, organic blue green algae and organic cranberries).

Once the fresh ingredients are blended with the Kombucha base, we then add the 5 flower essences to each batch.

We never stockpile large quantities because we believe fresh is best.  Our aim is to make each bottle taste as wonderful as it will make you feel.

Does ANNE’s KOMBUCHA contain caffeine or alcohol?

ANNE’s KOMBUCHA contains small amounts of naturally occurring caffeine from the organic green and black tea.  There is no added caffeine.

There is a trace of alcohol in it due to the natural fermentation process.  It is so low that it falls into a “non-alcoholic” beverage.  You can expect less than or equal to 0.5% by volume alcohol content.  ANNE’s KOMBUCHA tests every batch to ensure it meets this standard.

Why does ANNE’s KOMBUCHA use sugar?

Sugar is used as part of the ANNE’s KOMBUCHA recipe but it is not used as a sweetener.   It is the easiest food for the culture to ferment.  The Kombucha cannot ferment without sugar.   The sugar is broken down and converted into different components of the finished drink.  Sucrose is easiest to digest by the yeasts; they consume the sugar and put out carbon dioxide (the sparkly effect) & ethanol (alcohol).  The bacteria then consume the alcohol and the end product contains amino acids, trace vitamins, minerals and billions of probiotics we benefit from when consumed.

Does Kombucha contain caffeine, alcohol, gluten, preservatives…?

ANNE’s KOMBUCHA contains small amounts of naturally occurring caffeine from the organic green and black tea.  There is no added caffeine stimulants.

We test every batch to ensure the end product is a non-alcoholic beverage (less than or equal to 0.5% by volume alcohol content).

ANNE’s KOMBUCHA is vegan, gluten free and uses absolutely NO GMO’s, colors, preservatives or artificial sweeteners.

What are the benefits?

Active probiotic cultures from live organisms may appear in this raw Kombucha Tea and are normal and safe to consume.
